Mossa and Cenciarelli’s Farm- since 1968

The company stretches over the hills above Città di Castello for about 300 hectares, divided between natural pastures, arable lands (cereals and legumes) all rigorously organic.
Some hectares of wood complete the property. The crops are mainly devoted to the sheep farming activity. The crops that are sown generally are: barley, oat, field beans, clover, rye-grass, sainfoin and lucerne. In the flowering period all these arable lands acquire amazing colors like a beautiful crayon painting and moreover the grazing herd gives to the sight a characteristic touch.
The choice of making organic products reflects what we believe in and what we would like to propose to your tables for a perfect harmony between human and nature.

Fresh and ripened cheese for 3/6/9/12 months.

Cheese that needs an aging period of 6 months at least, the paste is hard and friable, lightly straw-coloured, the flavor is sweet but with a feeling of spiciness.
